2 1/2 pounds russet potatoes, scrubbed clean and cut into 1/3-inch-thick fries
2 tablespoons olive oil
1/2 teaspoon sea salt
2 tablespoons Buitoni® Refrigerated Freshly Shredded Parmesan Cheese
2 tablespoons chopped parsley
1 teaspoon white truffle oil for drizzling

Step 1
Place cut potatoes in large bowl; cover with hot water. Soak for 20 minutes to remove starch. Drain; spread on kitchen towel and pat dry.

Step 2
Place potatoes, oil and salt in large bowl; toss until evenly coated. Arrange potatoes in a single layer on 2 rimmed baking sheets; cover tightly with foil.
Preparation: 4 min
Step 3
Bake at 425° F for 5 minutes. Remove foil; bake for an additional 20 minutes. With spatula, flip fries over; bake for an additional 15 to 25 minutes or until golden and crisp. Rotate pans in the oven as needed so fries bake evenly.

Remove from oven; sprinkle with cheese. Transfer to serving dish. Season with additional salt, sprinkle with parsley and drizzle with truffle oil. Serve immediately.
