½ cup Coffee-mate® Peppermint Mocha Flavor Liquid Coffee Creamer
3 large eggs
1/3 cup vegetable oil
1 cup water
1 package (16.5 ounces) devil’s food cake mix

Prepare cake mix batter with water, oil and eggs according to package directions.

Line mini muffin cups with paper liners. Fill each liner with about 1 tablespoon batter.

Stir Coffee-mate mixture until combined and morsels are melted. Dip tops of cupcakes into chocolate mixture. Sprinkle with crushed peppermint candies, if desired.
