Ingredients
- ●1 sweet potato
- ●2 teaspoons olive oil
- ●1/2 small head of green cabbage
- ●1/2 small head of red cabbage
- ●2 avocados, diced
- ●1 cup black beans
- ●1 cup pickled red onions
- ●1 pack (8 ounces) SWEET EARTH Enlightened Foods Seasoned Chik'n™ Marinated Plant-Based Shreds
- ●1/2 cup pepitas, roasted and salted
- ●Salt & Pepper (to taste)
- ●6 tablespoons apple cider vinegar
- ●4 tablespoons agave syrup or sweetener of choice
- ●1-2 chipotles in adobo sauce
- ●1 teaspoon smoked paprika
- ●3/4 cup of oil
- ●Salt & Pepper (to taste)
Make It
Step 1
For Salad Mix: Preheat oven to 425° F. Wash, peel, and dice potato. Toss with 2 teaspoons olive oil and salt and pepper and roast for 25-35 minutes or until tender; set aside to cool slightly.
Step 2
Wash and shred cabbage and place in bowl or platter.
Step 3
Top with avocado, black beans, sweet potatoes, pickled red onions, Sweet Earth Seasoned Chik’n, pepitas and Chipotle vinaigrette.
Step 4
For Chipotle Vinaigrette: Add first 4 ingredients to a blender and blend until smooth.
Step 5
With blender running on low speed, drizzle in oil to emulsify.
Step 6
Season with salt and pepper, taste and adjust seasoning.
