INGREDIENTS

  • 1 package (8 ounces) SWEET EARTH Enlightened Foods Mindful Chik'n™ Strips
  • 1 tablespoon olive oil
  • Salt and ground black pepper to taste
  • 2 to 3 tablespoons buffalo sauce
  • 1 head chopped lettuce
  • 2 to 3 tablespoons olives, quartered
  • 1/4 cup chopped red onion
  • 1/4 cup shredded carrots
  • 1/2 cup shredded purple cabbage
  • 1/4 cup vegan feta
  • Ranch dressing
  • 1 to 2 teaspoons fresh dill, for garnish

MAKE IT

Step 1

Add olive oil and Mindful Chik’n to a pan over medium heat. Add salt and pepper to taste. Cook for 5 minutes.

Step 2

Add buffalo sauce to pan and cook for 2-3 minutes on low temperature.

Step 3

In a bowl, add lettuce, olives, red onions, carrots, cabbage, and ranch dressing. Toss salad.

Step 4

Top with vegan feta, fresh dill, and cooked buffalo Chik’n.

Step 5
