Ingredients
- ●1 package (8 ounces) SWEET EARTH Enlightened Foods Mindful Chik'n™ Strips
- ●1 tablespoon olive oil
- ●Salt and ground black pepper to taste
- ●2 to 3 tablespoons buffalo sauce
- ●1 head chopped lettuce
- ●2 to 3 tablespoons olives, quartered
- ●1/4 cup chopped red onion
- ●1/4 cup shredded carrots
- ●1/2 cup shredded purple cabbage
- ●1/4 cup vegan feta
- ●Ranch dressing
- ●1 to 2 teaspoons fresh dill, for garnish
Make It
Step 1
Add olive oil and Mindful Chik’n to a pan over medium heat. Add salt and pepper to taste. Cook for 5 minutes.
Step 2
Add buffalo sauce to pan and cook for 2-3 minutes on low temperature.
Step 3
In a bowl, add lettuce, olives, red onions, carrots, cabbage, and ranch dressing. Toss salad.
Step 4
Top with vegan feta, fresh dill, and cooked buffalo Chik’n.
