INGREDIENTS
- ●1 cup chickpeas, rinsed and drained
- ●2/3 cup water
- ●1/2 small red onion, roughly chopped
- ●5 ounces SWEET EARTH Enlightened Foods Ground Chipotle Style Seitan
- ●2/3 cup quick cooking oats
- ●1/3 cup corn kernels
- ●1/3 cup canned black beans, rinsed and drained
- ●1/2 cup shredded vegan cheese
- ●1/4 cup finely chopped cilantro
- ●1 tablespoon tomato paste
- ●1 teaspoon vegan Worcestershire sauce
- ●1/4 teaspoon salt
- ●1/8 teaspoon ground black pepper
- ●Vegetable oil or canola oil for frying
- ●2 cups panko breakcrumbs
- ●1/4 cup vegan mayonnaise
- ●1 teaspoon lime juice
- ●1/2 teaspoon chopped cilantro
- ●1/2 lime, cut into wedges for serving
- ●1/4 cup salsa for dipping
MAKE IT
Step 1
Place the chickpeas, water and red onion in a blender and process until smooth and transfer it to a large bowl.
Step 2
Add the seitan, oats, corn, black beans, cheese, 1/4 cup cilantro, tomato paste, Worcestershire, salt and pepper to the same bowl. Combine well with a fork.
Step 3
Set a medium pot filled half way with vegetable or canola oil over medium heat.
Step 4
Using a 1½ tablespoon scoop, portion out the filling into balls and roll each ball in the panko breadcrumbs gently to coat well.
Step 5
Once the oil reaches around 350° F, carefully drop about 6 to 8 fritters at a time into the oil and fry for 4-5 minutes until golden brown.
Step 6
Transfer the fritters to a paper towel-lined plate to drain. Combine mayonnaise, lime juice and 1/2 teaspoon cilantro in small bowl. Serve with fritters along with lime wedges and salsa.
