INGREDIENTS
- ●2 tablespoons chopped garlic
- ●1 tablespoon olive oil
- ●1/2 white onion, diced
- ●1 teaspoon liquid smoke
- ●2 teaspoons vegan Worcestershire sauce
- ●1 tablespoon cumin
- ●1 tablespoon chili powder
- ●1 large yellow bell pepper, diced
- ●2 chipotle chiles in adobo sauce, diced
- ●8 ounces SWEET EARTH Enlightened Foods Awesome Grounds
- ●1 can (16 ounces) black beans
- ●1 can (16 ounces) red beans
- ●1 can (29 ounces) organic crushed tomatoes
- ●1 cup cooked quinoa
- ●2 to 3 tablespoons cilantro
- ●1 cup avocado, diced
- ●1/2 cup vegan cheese
- ●1 jalapeño, diced
- ●Vegan sour cream (as desired)
MAKE IT
Step 1
In a pan, heat garlic with olive oil and cook until fragrant.
Step 2
Add the onions, liquid smoke, Worcestershire, cumin and chili powder and cook till clear, then add the peppers and diced chiles in adobo sauce. Cook for 5 minutes.
Step 3
Add Sweet Earth Awesome Grounds. Cook for an additional 5 minutes.
Step 4
Rinse all of the beans to remove excess sodium and then throw them in a large pot on medium heat with the crushed tomatoes and precooked quinoa.
Step 5
Add the onions and peppers to the large pot. As everything begins to simmer add the cilantro to the pot. For the best flavor let simmer for a few hours.
Step 6
Serve topped with white onion, fresh tomatoes, avocado, cheese, jalapeños and sour cream!
