INGREDIENTS

  • 1 package (8 ounces) SWEET EARTH Enlightened Foods Curry Recipe Seitan Satay
  • 2 tablespoons olive oil
  • 1 tablespoon diced shallots
  • 1 teaspoon minced ginger
  • 1 tablespoon chopped garlic
  • 2 tablespoons rice vinegar
  • 1 tablespoon lime juice
  • 1/2 cup peanut butter
  • 1/2 cup water, divided
  • 1 teaspoon salt
  • 2 tablespoons unrefined sugar
  • 1/4 teaspoon crushed red pepper
  • 2 tablespoons cornstarch
  • 1/4 cup coconut milk
  • Chopped cilantro for garnish

MAKE IT

Step 1
Skewer seitan pieces.
Step 2
Fire up the grill.
Step 3
Heat large pan over medium heat. Heat olive oil for 30 seconds, then sauté shallots, ginger, and garlic for 2-3 minutes. Add rice vinegar, lime juice, peanut butter, and 1/4 cup water. Stir until peanut butter melts. Add salt, unrefined sugar, and crushed red pepper. Simmer for 5 minutes. Mix cornstarch with remaining 1/4 cup water and slowly add it to sauce, constantly mixing. When sauce is thick, add coconut milk slowly while stirring. Add chopped cilantro. Transfer to dipping bowl.
Step 4
Place skewers on grill. Seitan is precooked, so simply heat. Dip in sauce and Enjoy!
