INGREDIENTS

  • 2 tablespoons olive oil
  • 1 package (8 ounces) SWEET EARTH Enlightened Foods Traditional Seitan Grounds or Tuscan Style Savory Grounds
  • 4 cloves garlic, chopped or pressed
  • 3 to 4 cans (28 ounces each) crushed tomatoes (regular or with basil, oregano and garlic) OR 12-15 fresh tomatoes (peeled, chopped and blended in a food processor)
  • 3 to 5 tablespoons dried basil
  • 1 to 2 teaspoons ground black pepper
  • 1 teaspoon maple syrup (optional)
  • 2 cups chopped fresh pumpkin
  • Pasta of choice

MAKE IT

Step 1
Heat the olive oil in a 5+ quart pot over medium heat, and add the seitan and garlic.
Step 2
Heat for 1 to 2 minutes, making sure not to burn the garlic, then add all the tomatoes, basil, black pepper and syrup. Stirring often, bring to a low boil.
Step 3
Reduce heat to low and simmer for 2-3 hours, stirring often.
Step 4
For the first half of the simmer time, do so with the pot uncovered, then cover.
Step 5
Add the chopped pumpkin, stir in and simmer for an additional 5 minutes or so.
Step 6
Serve over your favorite pasta, prepared as directed.
