INGREDIENTS
- ●1 package (8 ounces) SWEET EARTH Enlightened Foods Not Your Basic Black Bean Burger Plant-Based Burgers
- ●1 sweet onion
- ●2 heirloom tomatoes
- ●2 whole wheat buns
- ●2 tablespoons olive oil, divided
- ●Vegan or vegetarian mayonnaise
- ●2 large lettuce leaves
- ●1 avocado, sliced
- ●1 cup microgreens
MAKE IT
Step 1
Cook the burgers according to package directions. There are oven and skillet cooking options.
Step 2
Dice onion and slice tomatoes and set aside.
Step 3
Drizzle the inside of each bun with 1 tablespoon olive oil. Place in a toaster oven and toast until slightly browned.
Step 4
Spread a small amount of mayo over the inside of the buns. Top the bottom bun with lettuce, veggie burger, avocado, tomato, diced onions and micro-greens.
