INGREDIENTS
- 1 cup thinly sliced red cabbage
- 2 tablespoons lime juice
- 1 tablespoon red wine vinegar
- Sea salt to taste
- 1/2 medium red or green bell pepper, sliced
- 1/2 medium yellow onion
- 1 tablespoon extra virgin olive oil
- 1/4 poblano pepper, chopped
- 1 package (8 ounces) SWEET EARTH Enlightened Foods Ground Chipotle Style Seitan
- 1/4 cup corn
- 4 corn tortillas
MAKE IT
Step 1
Marinate cabbage in lime juice, red wine vinegar and sea salt.
Step 2
Stir-fry bell pepper and red onion over medium heat in 1 tablespoon olive oil for 5 minutes.
Step 3
Saute poblano pepper. Add seitan and corn. Stir frequently to prevent sticking.
Step 4
In a separate pan, heat each tortilla on medium heat—about 30 seconds each side.
Step 5
To assemble your super fresh tacos, start with the seitan, add salsa, then the veggies. Top it off with avocado, cabbage slaw, and fresh cilantro. For a winter fresh edition, substitute carrots for bell pepper, pickled spicy peppers for the poblano, and mandarin orange slices for the corn.
