INGREDIENTS
- 1 package (6 ounces) SWEET EARTH Enlightened Foods Mediterranean Veggie Burgers
- 1/4 cup tahini
- 2 tablespoons fresh lemon juice
- 2 cloves garlic, minced
- Salt and ground black pepper to taste
- Water to thin (add 1 tablespoon at a time)
- 2 whole wheat buns
- 2 tablespoons olive oil, divided
- 2 lettuce leaves
- 1 cucumber, thinly sliced
- 1/2 cup cherry tomatoes, diced
- 1 red onion, thinly sliced
- Handful of mint
- 1/2 cup feta cheese
MAKE IT
Step 1
Cook the burgers according to package directions. There are oven and skillet cooking options.
Step 2
Combine tahini, lemon juice, garlic, salt, pepper and water in a bowl or jar and mix well. It may take some effort to incorporate the tahini in the liquid, be gentle and it will all come together.
Step 3
Drizzle the inside of each bun with 1 tablespoon olive oil. Place in a toaster oven and toast until slightly browned.
Step 4
Spread a generous amount of tahini dressing over the inside of the buns. Top the bottom buns with lettuce, burger, sliced cucumber, diced tomatoes and onion. Top with mint, feta and bun.
