INGREDIENTS

  • 2 SWEET EARTH Enlightened Foods Teriyaki Veggie Burgers
  • 1 bunch broccolini
  • 1 small piece of ginger, peeled
  • 2 whole wheat sesame buns
  • 2 tablespoons olive oil, divided
  • Mayonnaise (vegan or vegetarian)
  • 2 decent size pieces of leaf lettuce
  • 1 red onion, thinly sliced

MAKE IT

Step 1
Prepare the Veggie Burger: Cook the burgers according to package directions. There are oven and skillet cooking options.
Step 2
Prepare the Ginger & Broccolini: Steam broccolini until soft. While you are waiting, thinly slice the ginger with a mandoline, then place on a grill for 2 minutes on each side or until grill marks show.
Step 3
Prepare the buns: Drizzle the inside of each bun with 1 tablespoon olive oil. Place in a toaster oven and toast until slightly browned.
Step 4
Assemble the burgers: Spread a small amount of mayonnaise over the inside of the buns. Top the bottom buns with the leaf lettuce, sliced onions, teriyaki burger and broccolini. Top with grilled ginger & bun.
