WHAT'S BETTER THAN A TERIYAKI VEGGIE BURGER?? This recipe is packed full of fresh veggies, delicious sauces and flavor.

INGREDIENTS

  • 2 SWEET EARTH Enlightened Foods Teriyaki Veggie Burgers
  • 3 tablespoons olive oil, divided
  • 2 thick slices of sweet onion (sliced about 1/4-inch thick)
  • 6 ounces sliced portobello mushrooms
  • Kosher salt and ground black pepper
  • 2 sprouted grain buns
  • 1 tablespoon mayonnaise
  • 2 decent sized pieces of leaf lettuce
  • 2 tablespoons BBQ sauce (homemade or all natural is the best)
  • 1/2 cup micro greens

MAKE IT

Step 1
Cook the burgers according to package directions. There are oven and skillet cooking options.
Step 2
Heat 1 tablespoon olive oil over medium-high heat. Add the two onion slices and cook 3-5 minutes per side or until tender and golden.
Step 3
Heat 1 tablespoon olive oil over medium heat. Add the mushrooms and sprinkle with salt and pepper. Toss to coat. Saute until tender, 5-7 minutes.
Step 4
Drizzle the inside of each bun evenly with remaining 1 tbsp olive oil. Place in a toaster oven and toast until slightly browned.
Step 5
Spread a small amount of mayo over the inside of the buns. Top the bottom buns with the leaf lettuce, the burger, the onion slice, mushrooms and drizzle with the BBQ sauce. Top with the micro greens and then the top bun.
