INGREDIENTS

  • 6 ounces shiitake mushrooms, sliced
  • 1 tablespoon tamari
  • 1 tablespoon liquid smoke
  • 2 tablespoons coconut oil
  • 1 tablespoon vegan Worcestershire sauce
  • 1 teaspoon red pepper flakes
  • 1 tablespoon maple syrup
  • 2 tablespoons chopped garlic
  • 1 tablespoon olive oil
  • 1/2 white onion, diced
  • 1 teaspoon liquid smoke
  • 2 teaspoons vegan Worcestershire sauce
  • 1 tablespoon ground cumin
  • 1 tablespoon chili powder
  • 1 large yellow bell pepper, diced
  • 2 chipotle peppers in adobo sauce, diced
  • 1 jalapeño, diced
  • 8 ounces SWEET EARTH Enlightened Foods Awesome Grounds
  • 1 can (16 ounces) black beans
  • 1 can (29 ounces) organic crushed tomatoes
  • 1 cup cooked quinoa
  • 30 wonton wrappers
  • 4 tablespoons chopped chives
  • Vegan sour cream

MAKE IT

Step 1

Slice the mushrooms, coat in tamari, tablespoon liquid smoke, coconut oil, tablespoon Worcestershire sauce, red pepper flakes and maple syrup and bake in the oven on 250° F for 30 minutes. Rotate the mushrooms in between midway for an even cook. Mushrooms should be crispy, not hard. (coat in ingredients for however long you can)

Step 2

In a pan, heat garlic with olive oil and cook until fragrant. Add the onions, 1 teaspoon liquid smoke, 2 teaspoons Worcestershire sauce, cumin and chili powder and cook until clear, then add the bell pepper, diced peppers in adobo sauce and jalapeño. Cook for 5 minutes. Now add Awesome Grounds. Cook for an additional 5 minutes.

Step 3

Rinse all of the beans to remove excess sodium and then throw them in a large pot on medium heat with the crushed tomatoes and precooked quinoa. Now add the onions and peppers to the large pot. For the best flavor let simmer for a few hours.

Step 4

As the chili cooks, prepare the wontons. Preheat oven to 300° F, place a single wonton wrapper in a muffin pan and press the wonton against the molding. Lightly spray with olive oil, and place in the oven for 5-8 minutes. Rotate mid-way to prevent burning. Remove from molds and let cool. Fill the cups with vegan chili and top with shiitake bacon, cheese, chives, and sour cream!
