Ingredients

  • 1/4 cup distilled white vinegar
  • 1 tablespoon Dijon mustard
  • 2 teaspoons granulated sugar
  • 1/4 teaspoon Kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/2 cup thinly sliced red bell pepper
  • 2 tablespoons chopped fresh chives
  • 1 tablespoon chopped fresh Italian parsley
  • 1 English cucumber, very thinly sliced

Make It

Step 1

Whisk together vinegar, mustard, sugar, salt and pepper in medium bowl. Add bell pepper, chives, parsley and cucumber; toss to coat. Cover; refrigerate for 1 hour before serving.
