Ingredients
- ●6 Roma tomatoes, diced
- ●1/2 red onion, diced
- ●1/2 jalapeño, seeded, minced
- ●1/2 lime, juiced
- ●1 tablespoon cilantro
- ●Salt and pepper (to taste)
- ●3 cups cooked rice
- ●1 tablespoon cilantro

- ●1 pack (8 ounces) SWEET EARTH Enlightened Foods Chipotle Chik'n™ Marinated Plant-Based Shreds
- ●1 cup pinto beans
- ●2 avocados, diced
- ●1 pack whole wheat tortillas
Make It
Step 1
Combine all the ingredients for the Pico de Gallo, taste, adjust seasoning.
Step 2
Combine rice, cilantro, lime juice and season with salt and pepper.
Step 3
Heat tortillas 1 at a time in a dry skillet for 30 seconds on each side.
Step 4
Place rice in the center, top with Pico, Chik’n, beans and avocado. Fold sides in and roll.
Step 5
Serve with Southwest Vegan Ranch.
