INGREDIENTS

  • 1 package ( 8 ounces) SWEET EARTH Enlightened Foods Chipotle Chik'n™ Marinated Plant-Based Shreds
  • 1 tablespoon olive oil
  • 1/2 medium onion, chopped
  • 1/2 red bell pepper, seeded and diced
  • 1/2 green bell pepper, seeded and diced
  • 2 cloves garlic, minced
  • 1/2 jalapeño, seeded and diced
  • 1 can fire roasted tomatoes, diced (14.5 ounces)
  • 1/2 cup frozen corn
  • 1 can black beans, drained (14.5 ounces)
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 cups vegetable broth
  • 1/2 cup lime juice
  • 1 tablespoon cilantro, chopped
  • Veggie cheese (optional)
  • Tortilla strips (optional)

MAKE IT

Step 1
In a large saucepan, warm olive oil over medium heat.
Step 2
Add onion and bell peppers. Sauté for 5-6 minutes until tender.
Step 3
Add in garlic and jalapeños. Sauté for a minute until garlic is fragrant.
Step 4
Stir in the tomatoes, corn, and spices.
Step 5
Pour in the broth and add the beans.
Step 6
Bring to a boil.  Cover and let simmer for 10 minutes.
Step 7
Uncover and add Chipotle Chik'n. Cook uncovered for another 5 minutes.
Step 8
Remove from heat and stir in the lime juice and cilantro.
Step 9
Top with veggie cheese and tortilla strips if desired.
