INGREDIENTS
- ●1 package (8 ounces) SWEET EARTH Enlightened Foods Chipotle Chik'n Marinated Plant Based Shreds
- ●2 tablespoons extra virgin olive oil
- ●1 onion, thinly sliced
- ●1 clove garlic, finely chopped
- ●2 red bell peppers, thinly sliced
- ●2 cups vegan cheese
- ●4 medium flour tortillas
- ●1 cup peach salsa (recipe below)
- ●Cilantro, for garnish
- ●PEACH SALSA:
- ●1 large ripe peach, diced (about 1/2 cup)
- ●1 large tomato, diced (about 1/2 cup)
- ●1 shallot, finely chopped
- ●1/4 cup chopped fresh cilantro
- ●2 tablespoons lime juice
- ●1/4 teaspoon cayenne pepper OR 1/2 jalapeño pepper, finely chopped
- ●1/2 teaspoon sea salt
MAKE IT
Step 1
In a pan over medium heat, heat oil and then sauté sliced onion, garlic and bell peppers for 5 minutes or until onions are translucent.
Step 2
Add in Sweet Earth Chipotle Chik’n and cook for another 5 minutes or until heated through.
Step 3
In a medium bowl make the salsa by combining peach, tomato, shallot, fresh cilantro, lime juice, pepper, and sea salt. Toss well. Season to taste with salt and pepper.
Step 4
On top of tortillas, add a layer of vegan cheese (about 1/2 cup) and Chik’n mixture.
Step 5
Fold tortilla in half and return to pan. Cook until cheese has melted, flipping to make sure tortillas don’t burn.
Step 6
Return tortillas to a plate. Add peach salsa and cilantro for garnish. Enjoy!
