INGREDIENTS

  • 1 package (8 ounces) SWEET EARTH Enlightened Foods Curry Recipe Seitan Satay, sliced lengthwise
  • 8 rice paper rounds
  • 4 ounces fresh spinach
  • 2 carrots, cut into matchsticks
  • 1 papaya, peeled and cut into matchsticks
  • 8 ounces rice noodles, cooked
  • 2 tablespoons chopped fresh basil
  • 2 tablespoons chopped fresh cilantro
  • 2 tablespoons chopped fresh mint

MAKE IT

Step 1
Heat a nonstick pan on medium-high heat. When pan is hot, sear both sides of each halved seitan strip until browned; set aside.
Step 2
Working one at a time, soak rice paper round in warm water until soft and pliable, then arrange equal portions of the satay and remaining ingredients on the bottom half of the round (leaving space on each side for folding). Fold bottom flap up, followed by the two sides and roll until sealed. Repeat with the remaining ingredients until all are wrapped up.
Step 3
Serve with Thai sweet chili sauce or coconut peanut sauce.
