- ●1 package (8 ounces) SWEET EARTH Enlightened Foods Mindful Chik'n Strips
- ●1/2 of chopped white onion
- ●1 small chopped green pepper
- ●1/2 chopped yellow pepper
- ●Black rice
- ●Flour tortillas
- ●Jerk Marinade:
- ●1 tablespoon brown sugar
- ●2 teaspoons lime juice
- ●1/4 cup soy sauce
- ●1 tablespoon avocado oil or olive oil
- ●1 Scotch bonnet pepper
- ●2 tablespoons Jamaican jerk seasoning
- ●1 teaspoon minced garlic
- ●Salt & pepper to taste
- ●Mango Salsa:
- ●1 chopped mango
- ●3 teaspoons of lime juice
- ●2 teaspoons chopped cilantro
- ●1/4 cup of chopped red onion
- ●1 small chopped red bell pepper
Make It
Step 1
Add seedless bonnet pepper, brown sugar, 2 teaspoons lime juice, soy sauce, avocado oil, Jamaican jerk seasoning, minced garlic, salt & pepper to a blender. Blend until very smooth.
Step 2
Marinate chik'n in jerk sauce for 1 hour.
Step 3
Grill chik'n with a bit of oil added to the grill. Grill chopped white onion, green bell pepper, and yellow pepper in a 1/2 tsp avocado oil in a separate pan. Add grilled chik'n to grilled veggies and cook for 1 -2 minutes.
Step 4
Mix chopped mango, lime, cilantro, red onion, and red bell pepper in a bowl.
Step 5
Add jerk chik'n, and mango salsa to a cooked tortilla. Serve with black rice.
