SUMMER-SIMPLE SPAGHETTI SAUCE!

INGREDIENTS

  • 2 packages (8 ounces each) SWEET EARTH Enlightened Foods Traditional Seitan Grounds or Tuscan Savory Grounds
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 3 medium white button mushroom caps, diced
  • 1 small green bell pepper, diced
  • 1 can (28 ounces) diced tomatoes
  • 1 can (16 ounces) tomato sauce
  • 1 can (6 ounces) tomato paste
  • 2 teaspoons dried oregano
  • 2 teaspoons dried basil
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • Vegan Parmesan shreds (optional)

MAKE IT

Step 1
Place seitan, onion, garlic, mushrooms and green pepper in a large, slightly oiled saucepan. Cook and stir until seitan is warmed through and vegetables are tender (5 to 7 minutes, stirring frequently).
Step 2
Stir diced tomatoes, tomato sauce, and tomato paste into the pan. Season with oregano, basil, salt, and pepper. Simmer spaghetti sauce for 1 hour, stirring occasionally.
Step 3
Serve over your favorite vegan spaghetti or pasta.
