Place potatoes in a large saucepan; cover with water. Bring to a boil over medium-high heat; boil for 15 to 20 minutes or until fork tender.

Line rimmed baking sheet with foil. Coat with olive oil. Place potatoes on baking sheet and flatten with bottom of drinking glass. Drizzle each with about ½ teaspoon pesto. Season with salt and ground black pepper, if desired.
