- ●1 large pineapple, peeled, cored and cut into 1/2-inch-thick slices
- ●1 jalapeño
- ●1 red bell pepper, halved lengthwise, seeds removed
- ●1 tablespoon olive oil
- ●1 lime, juiced
- ●1 teaspoon honey
- ●1 teaspoon kosher salt
- ●1/4 teaspoon ground black pepper
- ●1/2 cup diced red onion
- ●1/4 cup chopped cilantro
- ●3/4 teaspoon ground cumin
- ●1 can (7.6 fluid ounces) NESTLÉ® Media Crema Table Cream
MAKE IT
Step 1
Heat grill over a medium-high flame. Lightly brush pineapple slices, jalapeños and bell pepper with olive oil.
Step 2
Grill pineapple and peppers for 5 to 7 minutes or until grill marks appear and pineapple and peppers have begun to soften. Remove from grill; let cool.
Step 3
Chop grilled pineapple and bell pepper into bite-sized pieces. You should have about 2 cups of pineapple and red bell pepper.
Step 4
Whisk together 1 tablespoon olive oil, lime juice, honey, salt and pepper in a medium bowl. Add pineapple, red bell pepper, red onion, and cilantro; mix until well combined.
Step 5
Cut grilled jalapeño in half and remove seeds. Place in blender with cumin and Media Crema; cover. Blend on medium speed until smooth.
Step 6
Transfer from blender to bowl with pineapple mixture; stir until well combined. Enjoy! You can use it as a side or pair it with grilled chicken or fish.
