This easy no-churn banana ice cream is a creamy, soft-serve style frozen dessert made with just two main ingredients, frozen bananas and French Vanilla Coffee mate creamer. No ice cream maker is needed, and it's ready to eat in about 10 minutes, plus the time to freeze your bananas. It's a quick treat that leans toward healthier options, suitable as a weeknight dessert or afternoon snack.

Why this recipe works

Frozen bananas blend into a creamy, thick base that mimics the texture of soft-serve ice cream without heavy cream or added sugar. The Coffee mate French Vanilla liquid creamer adds vanilla sweetness and helps the mixture blend evenly. A splash of nonfat milk loosens the mixture to the right consistency. The result is a light, naturally sweet frozen dessert that comes together in minutes.

What you need to know before starting

Plan ahead for freezing. Cut ripe bananas into pieces and freeze them until solid, at least 2 to 4 hours, or overnight. The bananas must be fully frozen to achieve the right ice-cream-like texture.

Equipment: You will need a food processor or heavy-duty blender. A standard blender can work, but you may need to stop and scrape down the sides several times. If the mixture will not blend smoothly, add an extra splash of milk, one teaspoon at a time.

Serve immediately. This recipe produces a soft-serve consistency best eaten right away. If you refreeze it, the texture will become icy and firm, so let it sit at room temperature for 5 to 10 minutes before scooping.
