1/2 cup powdered sugar, divided
4 envelopes (7 grams each) unflavored gelatin
1 cup cold water, divided
2 cups granulated sugar
1/2 cup light corn syrup
2 large egg whites
3 teaspoons vanilla extract, divided
3/4 cup Nestlé® Toll House® Semi-Sweet Chocolate Morsels

Step 1
Spray 13 x 9-inch baking pan with nonstick cooking spray; dust with ¼ cup powdered sugar, evenly coating bottom and sides. Set aside.

Place gelatin in mixer bowl. Add ½ cup water; stir. Let sit for about 5 minutes or until thickened.

Heat granulated sugar, corn syrup, remaining ½ cup water and salt in medium saucepan over low heat, stirring with a silicone or wooden spoon for about 5 minutes or until sugar is dissolved.

Increase heat to medium; bring to a boil. Boil, without stirring, for about 15 minutes or until temperature on a candy thermometer reaches 238° to 240° F.

Add sugar mixture to bowl with dissolved gelatin. Beat on medium for 3 minutes. Increase speed to high and beat for 10 minutes. Mixture will triple in size and will become white and fluffy.

While mixture is beating, beat egg whites in a medium bowl until stiff white peaks form. Add egg whites and 2 teaspoons vanilla extract to sugar mixture; beat on low speed for 2 minutes.

Transfer mixture to prepared baking pan, scraping bowl with a silicone spatula. Spread evenly in pan. Dust with remaining ¼ cup powdered sugar.

Invert marshmallow mixture onto a cutting board. Cut into 54 squares (1 ½ inches). Place in a large resealable plastic bag. Sprinkle with additional powdered sugar in the bag to keep marshmallows from sticking together.

Heat almond milk, morsels and remaining teaspoon vanilla extract in large saucepan over medium heat, stirring occasionally, for about 10 minutes or until morsels are melted. Pour into serving cups; top with a homemade marshmallow.
