- ●2 tablespoons corn oil
- ●1/2 onion, sliced
- ●1 1/2 cups poblano pepper slices
- ●1/2 cup yellow corn kernels
- ●1 cup cooked, shredded chicken
- ●1 can (7.6 ounces) NESTLÉ® Media Crema
- ●1 tablespoon MAGGI® Granulated Chicken Flavor Bouillon
- ●5 large zucchini, halved, cooked and seeded
- ●8 ounces grated Manchego cheese
- ●5 slices bacon, fried and chopped
MAKE IT
Step 1
Preheat oven to 350° F. Heat the oil and fry the onion until it is transparent. Add poblano slices, corn and chicken; cook for 5 minutes. Add NESTLÉ® Media Crema and chicken bouillon; cook for 2 more minutes.
Step 2
Fill the zucchini with the poblano and corn mixture; top with Manchego cheese. Cook for 10 minutes or until cheese is melted.
Step 3
Serve garnished with bacon.
