INGREDIENTS

MAKE IT

Step 1

To make the batter, combine all dry ingredients in a medium bowl and gradually whisk in the seltzer water. Set aside.

Step 2

To make the cream sauce, combine all ingredients in a small bowl. Set aside.

Step 3

Combine shredded cabbage with lime juice and salt. Set aside.

Step 4

To cook the shrimp, add enough vegetable oil to reach 1 inch in depth in a heavy-duty medium frying pan or a deep fryer. Heat oil until a deep-fry thermometer reads 350° F. While the oil is heating, coat the shrimp with 1 cup of all-purpose flour and rest the shrimp on a plate. Once the oil comes to the right temperature, using tongs, and working in batches, dip the shrimp into the batter and then fry them in the oil until shrimp are pink and cooked through. The shrimp will take approximately 2-3 minutes to cook. Transfer cooked shrimp to paper towels to drain off excess oil. * Use caution when cooking the shrimp; oil will be very hot.

Step 5

Serve shrimp with tortillas, cabbage, salsa, cilantro, jalapeño, lime wedges and spice cream sauce.
