Mini Cinnamon-Hazelnut Pancakes

  • Kids love mini pancakes, but these mini cinnamon-hazelnut pancakes are so delicious, even adults will love them! Make them into cinnamon crusted pancakes for an extra tasty treat.
Key Ingredients
  • 1 cup whole wheat pastry flour or all-purpose flour
  • 2 teaspoons granulated sugar
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 3/4 cup lowfat buttermilk
  • 1/4 cup Coffee mate® natural bliss® Hazelnut Flavor All-Natural Coffee Creamer
  • 1 large egg
  • 2 tablespoons unsalted butter, melted
  • Pure maple syrup (optional)
  • Nonstick cooking spray, vegetable oil or butter for brushing griddle
Make It
Step 1
Mix together flour, sugar, cinnamon, salt, baking powder and baking soda in medium bowl.
Step 2
Beat together buttermilk, Coffee mate natural bliss Creamer, egg and butter in small bowl; add to flour mixture and stir until combined.
Step 3
Spray griddle or large skillet with nonstick spray or brush with oil or butter. Heat over medium heat. Spoon 1 tablespoon batter onto griddle and cook for about 2 minutes or until bubbles start to appear on top; flip over and cook an additional minute or until golden. If desired, serve pancakes on skewers along with maple syrup and sliced fruit.
Cook’s Tip:
Make Cinnamon-Crusted Pancakes! Once pancakes are cooked, brush tops with a little melted butter, then dust with cinnamon sugar. Place on heated griddle, cinnamon sugar-side down for 45 seconds or the sugar starts to caramelize and melt.
