1 cup uncooked, jasmine or long-grain white rice, rinsed
1 cup unsweetened flaked coconut, toasted if desired
1 (3-inch) Mexican cinnamon stick
3 cups boiling water
2 cups cold water
¼ to ½ cup granulated sugar
Shot of Nescafé® Dolce Gusto® Espresso (optional)

Step 1
Place rice in blender and process until finely ground. Place in large bowl along with coconut and cinnamon stick. Top with boiling water; stir.
Preparation: 5 min
Step 3
Pour the mixture into a blender; add cold water and sugar. Cover; blend until smooth. Pour mixture twice through a fine-mesh strainer into a pitcher; discard solids. (A coffee filter works well for straining the mixture a second time.) If desired, add espresso.

Chill until ready to serve. Serve over ice. Sprinkle with ground cinnamon if desired; serve each serving with a cinnamon stick.
