Make It
Step 1
In the bowl of a stand mixer fitted with the whisk attachment, or alternatively, use a large bowl with a hand mixer, add cream cheese, La Lechera, Libby’s pumpkin, cinnamon, pumpkin spice, and vanilla. Whip until smooth.
Step 2
Add the cold heavy cream and whip on medium speed, increasing the speed to high until nice and fluffy. About 3 minutes.
Step 3
Add a thin layer of the whipped pumpkin mixture to the bottom of a 9x13 pan, or a 9-inch spring form pan. Cover the bottom of the pan with the Maria’s Gamesa Cookies, add another layer, and repeat the layers another 4-5 times. Finish the top of the pumpkin spice carlota with the whipped pumpkin mixture.
Cover with plastic wrap and place in the fridge overnight to set.
Step 4
Remove the Pumpkin Spice Carlota from the fridge. Dust the top with more cinnamon and top with toasted chopped pecans if desired. Enjoy!
