- ●2 tablespoons vegetable or grapeseed oil
- ●1/4 cup chopped white onion
- ●2 cloves garlic, finely chopped
- ●1 pound roma tomatoes, diced
- ●1/4 teaspoon ground cumin
- ●1/4 teaspoon ground coriander
- ●1 teaspoon kosher salt
- ●1/4 teaspoon ground black pepper
- ●2 guajillo chiles (can substitute 2 teaspoons chili powder)
- ●1/2 cup NESTLÉ® Media Crema Table Cream
MAKE IT
Step 1
Heat oil over medium heat in a medium skillet.
Step 2
Add onions; cook, stirring frequently, until onions are light brown. Add garlic; cook for a minute.
Step 3
Add tomatoes, cumin, coriander, salt and pepper; cook, stirring occasionally, for 5 to 7 minutes or until tomatoes are soft.
Step 4
While tomatoes cook, turn another burner on low heat and place guajillo chiles directly on burner and char until crisp and 75% charred. Set aside and allow to cool. Remove stems.
Step 5
Transfer tomato mixture and chiles to blender; cover. Blend from low to high in 30-second intervals. Blend on high until smooth.
Step 6
Transfer to bowl and stir in Media Crema. Check seasoning and add more if desired and enjoy!
