Step 1

Fill medium saucepan with water; bring cinnamon and peppercorns to a boil. Once boiling, add guajillo chile, tomatoes, tomatillos and garlic; boil for 10 to 12 minutes. Strain; set aside to cool for 20 minutes.

Step 2

Set a small skillet over medium heat; toast cashews, pumpkin seeds and sesame seeds for about 3 minutes.

Step 3

Place tomato mixture and seed mixture in a blender; cover. Blend on medium speed for 1 minute; blend on high until smooth.

Step 4

Transfer to a bowl and stir in Media Crema and enjoy! (Great with sautéed vegetables, chicken and pork rice bowls.)
