Whisk baking mix, baking powder, Coffee mate natural bliss Creamer, coconut milk, water and eggs in large bowl until combined.
Step 2
Heat griddle or large skillet over medium heat (greasing if necessary). Pour about ¼ cup pancake mixture onto griddle for each pancake.
Step 3
Cook for 2 to 3 minutes or until bubbles form on top.
Step 4
Flip over; cook for an additional 2 minutes or until golden. Serve topped with maple syrup, toasted coconut flakes and fresh berries, if desired.
