2 large almost ripe avocados
¼ cup all-purpose flour
½ teaspoon kosher salt
1/4 teaspoon ground black pepper
1 large egg, lightly beaten
1 cup panko breadcrumbs
¼ cup Buitoni® Refrigerated Freshly Shredded Parmesan Cheese
Chipotle dipping sauce or ranch dressing for dipping (optional)

Step 1
Spray large baking sheet with cooking spray. Combine flour, salt and pepper in shallow dish. Place egg in separate shallow dish. Combine breadcrumbs and cheese in another separate shallow dish.

Cut avocados in half lengthwise; remove pits and peel. Slice each half into 6 wedges. Dip avocado slices in flour; shake off excess. Dip in egg and then into breadcrumb mixture. Place on prepared baking sheet. Repeat. Spray with cooking spray.

Cook’s Tip: Leftover fries can be stored in airtight container in refrigerator for up to 3 days. To refresh, place on baking sheet and bake at 325° F until warm.

Bake at 400° F for 25 minutes or until golden brown, turning slices over halfway through. Season with salt. Cool for a few minutes before serving. Serve with chipotle dipping sauce or ranch dressing for dipping, if desired.
