2 large eggs
1 container (15 ounces) Buitoni® Refrigerated Marinara Sauce, heated
Buitoni® Refrigerated Freshly Shredded Parmesan Cheese
Ground black pepper
1 cup seasoned panko breadcrumbs

Step 1
Spray large baking sheet with nonstick cooking spray. Slice eggplant into ½-inch-thick slices. Whisk eggs. Dip eggplant slices into eggs and then coat with breadcrumbs. Place on baking sheet.
Preparation: 15 min
Step 2
Bake at 400° F for 20 minutes. Turn slices over and bake for an additional 20 minutes or until slightly browned.

Step 3
Top each eggplant slice with 1 to 2 tablespoons sauce and ½ tablespoon cheese.

Bake for 5 minutes to melt cheese. Season with pepper.
