1 container (15 ounces) Buitoni® Refrigerated Marinara Sauce, heated
1 cup seasoned panko breadcrumbs
2 large eggs
1 large (about 1 ½ pounds) eggplant

Step 1
Spray large baking sheet with nonstick cooking spray. Slice eggplant into ½-inch-thick slices. Whisk eggs. Dip eggplant slices into eggs and then coat with breadcrumbs. Place on baking sheet.

Top each eggplant slice with 1 to 2 tablespoons sauce and ½ tablespoon cheese.
