3 large basil leaves, torn in small pieces
4 teaspoons Buitoni® Refrigerated Pesto with Basil
1/4 teaspoon salt
½ teaspoon dried Italian herb seasoning
1 cup canned petite diced tomatoes, drained
2 large cloves garlic, finely chopped
1 teaspoon olive oil
1 large egg, beaten
½ teaspoon garlic powder
½ teaspoon dried oregano, crushed
3 tablespoons Buitoni® Refrigerated Freshly Shredded Parmesan Cheese
1/3 cup almond meal
2/3 cup shredded mozzarella cheese, divided
4 cups grated zucchini (about 6 medium)

Line a large baking sheet with parchment paper or foil and spray with nonstick cooking spray. Set aside.

Transfer to a fine sieve or strainer and squeeze out excess liquid with back of spoon. If cool enough, squeeze out excess liquid with hands.

Combine zucchini, 1/3 cup mozzarella cheese, almond meal, Parmesan cheese, oregano, garlic powder and egg in large bowl. Stir to combine. Divide mixture in half. Shape each half into a ball and place on prepared baking sheet. Gently press and shape each ball into a 5-inch disc, about ½-inch thick.
