Step 1

Preheat oven to 350° F. Grease 2-quart baking dish.

Step 2

Heat oil in a large saucepan over medium heat. Add ham; cook, stirring occasionally, for about 6 minutes or until slightly golden. Reduce heat to low. Add garlic; cook for an additional 3 minutes. Remove from heat.

Step 3

Dissolve bouillon in evaporated milk.

Step 4

Add beans, stuffing mix and bouillon-milk mixture. Gently stir to moisten. Spoon into prepared baking dish; cover with foil.

Step 5

Bake for 30 minutes or until heated through. Serve warm with a squeeze of lime, if desired.

Recipe Variation

If you’d like to add plantains to the stuffing you’ll need: 2 tablespoons vegetable oil 2 yellow plantains, diced into 1-inch cubes FRY plantains in a large skillet in a single layer over medium-high heat, stirring frequently, for 3 to 5 minutes or until golden. Remove and place on paper towels to drain. May need to fry in 2 batches, adding more oil if necessary. Add plantains when you add the beans, stuffing mix and bouillon-milk mixture.
