The Secret Ingredient
Ingredients
- ●1/4 cup lime juice
- ●1 1/2 teaspoons MAGGI Granulated Chicken Flavor Bouillon
- ●1/2 teaspoon crushed dried Mexican oregano
- ●1/4 teaspoon ground coriander
- ●1 clove garlic, finely chopped
- ●2 pounds chicken, skin removed
- ●2 tablespoons canola oil
- ●1 teaspoon granulated sugar
- ●1 teaspoon NESCAFÉ CLÁSICO 100% Pure Instant Coffee Granules
- ●3/4 cup water, divided
- ●1/2 cup roughly chopped yellow onion
- ●2 Roma tomatoes, roughly chopped
- ●2 green bell peppers, chopped
- ●1/4 cup sliced green olives
- ●1 can (8 ounces) tomato sauce
- ●2 tablespoons chopped cilantro
Make It
Step 1
Combine lime juice, bouillon, oregano, coriander and garlic in a large resealable freezer bag. Add chicken pieces; seal bag. Shake bag gently, pressing with fingers to incorporate juice and seasoning. Marinate in refrigerator for 45 minutes.
Step 2
Heat oil in a large pot over medium heat. Add sugar and coffee granules; stir rapidly. Sugar will begin to burn slightly. Add chicken with marinade; cook, turning chicken frequently, for 10 minutes.
Step 3
Add ¼ cup water; cover. Reduce heat to medium-low; cook, stirring frequently, for 15 minutes.
Step 4
Add onion, tomatoes, bell peppers and olives. Cover; cook for 10 minutes or until vegetables are cooked through.
Step 5
Add tomato sauce and remaining ½ cup water; cover. Reduce heat to low; cook for 10 minutes.
Step 6
Serve with cilantro.
