Step 1

Combine orange juice, honey, rice vinegar, coffee granules and bouillon in large bowl. Add shrimp; stir to coat. Cover; refrigerate for 30 minutes.

Step 2

Preheat grill to medium-high; lightly oil grate.

Step 3

Remove shrimp from marinade. Pour marinade in a small saucepan. Cook on high heat for 10 minutes or until slightly reduced. Set aside.

Step 4

Thread about 4 shrimp, 2 bell pepper pieces and 2 to 4 onion wedges onto 8 (12-inch) skewers. Grill, basting with cooked marinade constantly, for about 5 minutes or until shrimp turn pink on one side. Turn shrimp; grill, basting constantly, for an additional 3 minutes or until shrimp are completely pink. Garnish with fresh chopped cilantro, if desired.

NOTE:

If using wooden skewers, soak in water for 20 minutes before threading to avoid scorching.

COOK’S TIP:

Be sure to remove shrimp from marinade after 30 minutes as the acid from the citrus cooks the shrimp. Recipe performs best on a grill. Do not recommend using a grill pan.
