Ingredients
- 2 tablespoons chipotle salad dressing (see recipe on site)
- 1/4 cup chopped grilled chicken breast meat
- 1/4 cup halved grape or cherry tomatoes
- 1/4 avocado, cubed (about 1/4 cup)
- 2 tablespoons roasted corn kernels
- 1 tablespoon toasted pepitas
- 1/2 cup or more shredded romaine lettuce
Make It
Step 1
Layer in a liter-size Mason jar with lid: chipotle salad dressing, chicken, tomatoes, avocado, corn, pepitas and lettuce. Seal with lid and store in refrigerator for up to 1 day. To serve, shake salad in jar to mix with dressing.
