½ cup Tribe® Spicy Red Pepper Hummus, divided
¼ cup finely chopped onion
½ cup plus 1/3 cup panko breadcrumbs, divided
2 large eggs
4 cups mixed salad greens
½ teaspoon cayenne pepper
½ cup grape or cherry tomatoes, cut in half
½ teaspoon salt
½ cup finely chopped cilantro
1 can (14.5 ounces) chickpeas, rinsed and drained
1 teaspoon ground cumin
¼ cup vegetable oil
1 tablespoon water

Step 1
Place chickpeas in food processor; cover. Process until mashed. Stir in ½ cup breadcrumbs, eggs, cilantro, onion, cumin, pepper and salt.

Using 1 rounded tablespoon, form mixture into balls and then flatten to make falafel patties. Place remaining 1/3 cup breadcrumbs on a plate. Coat falafel patties in breadcrumbs.

Heat oil in large skillet over medium heat. Fry falafel a few at a time for 2 minutes on each side or until golden brown. Drain on paper towels.

Combine ¼ cup hummus and water in a small bowl.

Arrange salad greens and tomatoes on a large serving platter. Place remaining ¼ cup hummus on platter for spreading on falafel. Drizzle with hummus drizzle.
