Ingredients
- ●4 cups water
- ●2 teaspoons Maggi® Granulated Chicken Flavor Bouillon
- ●8 cherry tomatoes, cut in half
- ●1 small zucchini, trimmed and halved
- ●1 medium carrot, peeled and quartered
- ●1/2 green bell pepper, seeded
- ●1/2 to 1 jalapeño, seeded
- ●1 large clove garlic, peeled
- ●1 1/2 cups cooked shredded chicken breast meat
- ●1/2 cup whole-kernel corn
- ●1 1/2 teaspoons ground cumin
- ●1 cup baked tortilla strips or chips
- ●1/4 cup chopped fresh cilantro
Make It
Step 1
Bring water to a boil in medium saucepan. Add bouillon; stir to dissolve.
Step 2
Place tomatoes, zucchini, carrot, bell pepper, jalapeño and garlic in food processor; cover. Process until chopped. Add to saucepan.
Step 3
Cook, stirring occasionally, for 15 minutes.
Step 4
Add chicken, corn and cumin; cook, stirring occasionally, for 10 minutes.
Step 5
Serve with tortilla strips and cilantro.
This recipe makes 5 servings, about 1 1/3 cups per serving.
