Ingredients

  • 4 cups water
  • 2 teaspoons Maggi® Granulated Chicken Flavor Bouillon
  • 8 cherry tomatoes, cut in half
  • 1 small zucchini, trimmed and halved
  • 1 medium carrot, peeled and quartered
  • 1/2 green bell pepper, seeded
  • 1/2 to 1 jalapeño, seeded
  • 1 large clove garlic, peeled
  • 1 1/2 cups cooked shredded chicken breast meat
  • 1/2 cup whole-kernel corn
  • 1 1/2 teaspoons ground cumin
  • 1 cup baked tortilla strips or chips
  • 1/4 cup chopped fresh cilantro

Make It

Step 1

Bring water to a boil in medium saucepan. Add bouillon; stir to dissolve.

Step 2

Place tomatoes, zucchini, carrot, bell pepper, jalapeño and garlic in food processor; cover. Process until chopped. Add to saucepan.

Step 3

Cook, stirring occasionally, for 15 minutes.

Step 4

Add chicken, corn and cumin; cook, stirring occasionally, for 10 minutes.

Step 5

Serve with tortilla strips and cilantro.

This recipe makes 5 servings, about 1 1/3 cups per serving.
