Ingredients
- ●2 large beets, tops removed
- ●¼ cup lemon juice
- ●2 tablespoons tahini paste
- ●1 tablespoon grated lemon peel
- ●1 large clove garlic, chopped
- ●½ teaspoon ground cumin
- ●¼ teaspoon salt
- ●¼ teaspoon ground black pepper
- ●1 tablespoon chopped fresh parsley
- ●2 teaspoons roasted pine nuts (optional)
Make It
Step 1
Place beets in a large pot; add enough water to cover beets. Bring to a boil; boil for 30 to 40 minutes.
Step 2
Peel beets by rubbing skin off with a paper towel. Chop into medium size pieces (about 1 ¾ cups).
Step 3
Place beets, lemon juice, tahini, lemon peel, garlic, cumin, salt and pepper in food processor or blender; cover. Process until smooth.
Step 4
Garnish with parsley and pine nuts. Serve with cucumber slices, pita chips, corn chips or naan bread (see recipe on this site).
