Ingredients

  • 1 cup almond flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup granulated sugar
  • ¼ cup (1/2 stick) unsalted butter, softened
  • 2 large eggs
  • 2 tablespoons milk
  • 1/2 teaspoon vanilla extract
  • ½ cup chopped fresh strawberries
  • 2 tablespoons sliced almonds
  • Whipped cream (optional)
  • Sliced strawberries (optional)

Make It

Step 1

Combine almond flour, baking powder and salt in small bowl.

Step 2

Beat sugar and butter in medium mixer bowl until smooth. Add eggs one at a time, beating well after each addition. Beat in milk and vanilla extract. Gradually beat in almond flour mixture. Gently stir in chopped strawberries.

Step 3

Spray 9-inch-round cake pan with nonstick cooking spray. Spread batter into prepared pan. Sprinkle with almonds.

Step 4

Bake at 350° F for 30 minutes or until wooden pick inserted in center comes out clean.

Step 5

Run knife around edge of pan. Invert onto plate; invert again onto serving plate so almonds are on top. Serve garnished with whipped cream and sliced strawberries.
