Brazilian Black Bean Stew

  • 1 teaspoon NESCAFÉ CLÁSICO 100% Pure Instant Coffee Granules
  • 1 teaspoon MAGGI Granulated Chicken Flavor Bouillon, divided
  • 1/2 pound lean pork stew meat
  • 4 ounces (about 4 strips) smoked bacon, chopped into 1/2-inch pieces
  • 4 cups water
  • 1 cup dried black beans, rinsed
  • 7 ounces smoked lean pork sausage, chopped into 1/4-inch pieces
  • 1/3 cup chopped onion
  • 2 cloves garlic, finely chopped
  • 1 dried bay leaf
  • 3 cups cooked white rice
  • 1 jalapeño, sliced for garnish
  • 1/4 cup chopped flat leaf parsley for garnish

Make It

Step 1

Combine coffee granules and 1/2 teaspoon bouillon in a medium bowl. Add stew meat; stir to season.

Step 2

Heat a large pot over medium heat. Add bacon; cook, stirring frequently, for 2 minutes. Add stew meat; cook, stirring frequently, for about 10 minutes or until stew meat is browned.

Step 3

Add water, beans, sausage, onion, remaining ½ teaspoon bouillon, garlic and bay leaf. Bring to a boil; reduce heat to low. Cover; cook for 1 hour. Remove bay leaf.

Step 4

Serve with white rice. Garnish with jalapeño slices and parsley.
