The Secret Ingredient
Ingredients
- ●2 ancho chiles, seeded
- ●6 pasilla chiles, seeded
- ●1 1/2 cups water
- ●2 ounces piloncillo (or substitute with 1/4 cup packed brown sugar)
- ●1/2 cup vinegar
- ●4 tablespoons packed brown sugar
- ●1 1/2 tablets MAGGI® CONSOMATE® Tomato & Chicken Flavor Concentrate
- ●2 pounds chicken wings
Make It
Step 1
Heat grill over medium heat. For the sauce, roast the chiles and place them in hot water for 5 minutes with the piloncillo. Cut the chiles into strips and boil without stirring for 15 minutes with the vinegar and brown sugar over low heat. Blend the chile paste with CONSOMATE® Concentrate. Marinate the wings with the sauce for 1 hour.
Step 2
Remove the wings from the marinade (do not discard) and grill over direct heat for 4 minutes, turning them once. Transfer the wings to indirect heat and continue to grill for an additional 30 minutes, turning occasionally. Keep the grill covered. Boil the reserved marinade for 5 minutes.
Step 3
Serve wings with the sauce.
